A TANDOOR IS A CYLINDRICAL CLAY OVEN, WHICH IS USED TO BAKE BREAD AND ROAST LAMB OR CHICKEN OVER A SUPPRESSED FIRE. ALL FOODS COOKED IN THIS OVEN ARE MARINATED IN YOGURT TOGETHER WITH A SPECIAL BLEND OF FRESH SPICES AND HERBS TO SUIT EACH ITEM. THE TANDOOR IS KEPT AT HIGH TEMPERATURE WITH THE SMOLDERING CHARCOAL TO HEAT ITS WALLS. THE RADIATING HEAT OF THE CLAY WALLS COOK THE FOOD AND GIVE IT A UNIQUE FLAVOR.
